Shrimp and potato salad

Ingredients

500 g shrimps, cleaned

500 g potatoes

1tomato

1 pepper

½ onion or 2 spring onions

5-6 sprigs of parsley

2 tablespoons olive oil

Lemon juice, of 1 lemon

Salt, pepper

Execution Method

Wash the shrimps and boil them in a pan with water for 10-15 minutes, depending on their size.

Peel the potatoes and boil them in water with some salt in a different pan for 15-20 minutes.

When ready, add the chopped potatoes in a bowl, then add the shrimps after draining them, the finely chopped parsley, the tomato and the pepper cut in cubes.
