BULGUR SALAD

Ingredients

1 cucumber

Lemon zest

1 tomato

15g mustard

2 tablespoons lemon juice

250 g bulgur

Pepper, salt

¼ olive oil or coconut oil

Rocket

2 tablespoons water

250gwater for the bulgur

Parsley, dill

Execution Method

Add the bulgur in a non-stick pan with the water, stirring continuously.

After boiling, remove from heat and set aside covered with a tea towel and the lid until the bulgur soaks up all of the liquid, for 15 minutes.

Cut into small pieces the tomato and cucumber, and add them in a bowl with the rocket.

Mix the lemon zest with the mustard, lemon juice, olive oil, water, parsley and dill.

When the bulgur is ready, add it in the bowl and mix with the vegetables.

Pour the mustard dressing and serve.
