Vegan Mozzarella

Ingredients

100 g cashew nuts

2 teaspoons psyllium

2 teaspoons lemon juice

In a bowl, add the cashew nuts, pour enough hot water over the nuts to cover them and let them soak.

Then in another bowl with 400 ml water add 2 teaspoons psyllium and let it rest for 2 hours, when it should look like jelly.

In a blender, add the psyllium and cashew nut mixture after draining it, as well as the lemon juice; mix and pour in a deep plate, and place it in the refrigerator for one hour.

Remove from the refrigerator and slice thinly vertically; use a plate to serve with some 4ALLNUTRITION TOMATO & BASIL sauce.
