Turkey Fillet with Pomegranate Glaze

Ingredients

1/2 cup finely chopped fresh parsley

1 teaspoonsalt

1 teaspoonsmoked paprika

1 teaspoonwhite pepper

2 cloves of garlic

1/2 cup honey

1 kilo turkey breast fillet

1 tablespoon corn flour

3 cups (+ 1 tablespoon) pomegranate juice

Preheat the oven at 200 oC set to fan

In a bowl, mix the salt, paprika, pepper and garlic (finely chopped)

Turn the turkey fillets in the mixture to spread it

Bake for 30 minutes covered with aluminum foil

Uncover and bake at 190 oCin grill mode for another 15 minutes until meat is slightly golden

Squeeze some pomegranates, as you do with oranges, to make 3 small cups of juice

In a large frying pan, mix the pomegranate juice with the honey

In a small glass, mix 1 tablespoon pomegranate juice with the corn flour

When the pomegranate juice and honey have boiled (i.e. when you have approximately 1 cup of liquid), add 1 tablespoon pomegranate juice with the corn flour

Stir until set, for 1 minute
