Light Cheesecake Red Berries


300 g cottage cheese
50 g yoghurt 2%
1 sachet ΙNSTICK Vanilla flavor
120 g oats
4 tablespoons coconut oil
3-4 tablespoons water
1 tablespoon honey
1/2 sachet ΙNSTICK Vanilla flavor
1 pinch of salt
120 g Red Berries, frozen

Execution Method
Blend the oats into a blender until they have turned into a fine flour
Add the coconut oil and then add the honey, half a sachet of ΙNSTICK Vanilla flavor, 1 pinch of salt and 3-4 tablespoons water to make a sticky dough
Spread and press them into the base of a small baking tin and bake at 220 °C for about 20 minutes
Make sure you won’t overbake the dough, ideally it just needs to turn slightly pink in color
Wait until cold for about 1 hour
For the filling: Mix together the cottage cheese with the yoghurt and ΙNSTICK Vanilla flavor and place in the refrigerator to chill
In a frying pan, add the Red Berries with 1 tablespoon water and mash some berries using a fork
Stir frequently over medium heat; wait until cold
Spread the cottage cheese filling over the oat base and add the Red Berries jam
