Delicious and Light Rice with Mussels


300 g. mussels, meat

300 g. mussels in shell or without the shell

1 onion

½ a bunch of dill

1 clove of garlic

4 spring onions

300 g glutinous orArborio rice

1200 ml water or vegetable broth or a vegetable bouillon cube, diluted in the water

5 tablespoons olive oil

Lemon zest, of 2 lemons

Lemon juice, of 2 lemons

2 bay leaves

Salt, pepper

Execution Method
Place a frying pan over medium to high heat.
Coarsely chop the onion, spring onions and garlic. Then add in the hot frying pan the olive oil and the chopped vegetables.
Add salt, pepper, bay leaves and wait for 2-3 minutes until they get golden brown. Add the rice and water (it should be warm) or vegetable broth, if you prefer.
Cook for 15-20 minutes over medium to high heat while stirring often.
After the rice softensand just before it is ready, add the mussels, lemon zest and cover frying pan with lid, lower heat and wait for 2-3 minutes until the mussels open.
Take off from heat and add some dill, salt and pepper if required, some fresh olive oil and some lemon zest.
Αφού ετοιμαστεί το ρύζι και λίγο πριν είναι έτοιμο προσθέτουμε τα μύδια, το ξύσμα από το λεμόνι και σκεπάζουμε το τηγάνι με καπάκι και αφήσουμε σε χαμηλή φωτιά τα μύδια για 2-3 λεπτά.
Αποσύρουμε από την φωτιά και προσθέτουμε λίγο άνηθο, αλατοπίπερο αν χρειάζεται, λίγο φρέσκο ελαιόλαδο και λίγο ξύσμα λεμονιού.
