Greek Stuffed Vegetables – Gemista

Slice the top of the bell pepper and remove any seeds and flesh. The same process should be repeated for all other vegetables we want to use.

Slice off the top side of the tomatoes and use a spoon to scoop out the flesh and set aside until needed.

The same process should be repeated for all other vegetables we want to use (e.g. zucchini, eggplant, etc.). In any case, we can set aside the flesh of all vegetables we like and finely chop it to add it to the filling.

Place a non-stick frying pan over high heat with some coconut oil and sauté the onion. When it’s golden brown, add the minced meat (and the flesh of vegetables, as desired). When the minced meat turns golden brown, add the rice, spearmint, salt and pepper. Sauté until the vegetables caramelize nicely.

Remove the frying pan from heat.

Fill in the vegetables you prefer and pour over the tomato flesh you had placed in a bowl to keep it juice. Drizzle with the rest of the oil.

Bake in the oven, at 200 °C for 90 minutes.
